DENCH. is the pop-up restaurant started by Jimmy Wong in his studio apartment during his junior year at the California Polytechnic State University, San Luis Obispo. As part of his senior project, Jimmy, along with Carly Lamera, created this cookbook to document all of the different stories and recipes from the pop-up.
The book is split into a few different sections: it begins with the introduction and backstory of my journey and how it led to the creation of DENCH. as well as the stories and challenges of doing the pop-up, then all of the dishes, separated by the different courses, and finally the closing notes on the logistics of doing the pop-up, featuring a timeline and floor-plan of the whole operation!
